^^C6^^ And how do the little knots get tied?
C6: just imagine that the meat is inside of a wheel. And the wheel spins around the meat.
Now modify that idea with a twine that comes out of the wheel and wraps around the meat.
Of course there is a tying and cutting mechanism for each rotation, but the twine stays in the wheel as it spins around the meat.
It's not really a wheel, but that's the best way to visualize how it works.
Google FTT TW tying machines.
